Apple Cinnamon Squares
Ingredients
- 122 g Tree Top Apple Sauce
- 46 g Tree Top LM 3/8” Apple Dice w/peel rehydrated in 39.60 g Tree Top Apple Juice Concentrate (reconstituted with 198 g water)
- 139 g plus 28 g butter
- 165 g brown sugar
- 100 g eggs
- 8.40 g vanilla
- 40 g whole-wheat flour
- 85 g all-purpose flour
- 9 g plus 4.5 g ground cinnamon
- 4.60 g baking powder
- 2.30 g baking soda
- 83 g raisins or dried cranberries
- 100 g sugar
Directions
Preheat oven to 350 F. Grease and flour an 8-inch square baking dish. Rehydrate the apples with the apple juice for at least 5 minutes.
In a large mixing bowl, combine melted 113 g of the butter with the brown sugar. Beat in the eggs, one at a time. Add the applesauce and vanilla.
Stir in the whole-wheat flour. Combine the all-purpose flour, 4.50 g of the cinnamon, baking powder and baking soda in a small bowl and add to the batter. Add the apples and the raisins/cranberries; stir to combine. Pour into the baking dish.
Mix the remaining 18 g cinnamon and the sugar. Sprinkle over the top of the batter.
Melt the remaining 28 g butter and drizzle over the sugar and cinnamon.
Bake for 30 minutes, or until a skewer inserted into the center comes out clean. Remove and cool in the pan on a wire rack. When cool, slice into square.
