Chewy Apple Nut Granola Bars
Ingredients
- 30 g Tree Top Intermediate Moisture Apple Chips 1/8″ x 1/8″ Sulfured
- 15 g Tree Top Apple Juice Concentrate
- 15 g Tree Top Apple Flake Powder, 12 Mesh Non-sulfured
- 5 g Tree Top Apple Fiber, 50 Mesh, Non-sulfured
- 75 g brown rice syrup
- 40 g rolled oat flakes
- 30 g rice crisps
- 20 g almonds, roasted, chopped 1/4″
- 20 g sunflower seeds shelled, roasted
- 18 g cranberries dried chopped 1/2
- 12.20 g raisins, currents
- 10 g wheat flour
- 5.30 g evaporated cane sugar
- 20 g sunflower seeds shelled, roasted
- 5 g canola oil
- 2.80 g glycerine
- 1.30 g vanilla extract
- 0.40 g apple flavor
- 0.23 g sea salt
Directions
Blend salt and cane sugar with apple flavor and reserve. Mix oats, apple chips, nuts, flake powder, raisins, rice crisps, fiber, cranberries and flour together and set aside.
Heat brown rice syrup, apple concentrate, oil, glycerine and vanilla in a steam jacket blender and begin heating. Add reserved sugar and flavor mixture. Heat to 195 F, stirring constantly until sugar completely dissolves. Fold in reserved oat mixture and mix on low setting until incorporated.
Press into parchment-lined tray only until even with no gaps 3/4″, not compacted. Cover exposed surfaced with plastic to avoid drying. Rest until reaches room temperature and cut into bars to 2″ x 1″ and individually package and seal.
Yields 20 bars at 15 grams each.
