Garlic Sesame Grape Chicken Bites
Ingredients
Boneless Chicken Bites
- 250 g all-purpose flour
- 24 g salt
- 2 g black pepper, ground
- 2 g cayenne pepper
- 2 g garlic powder
- 2 g paprika
- 50 g egg
- 250 g milk
- 475 g chicken breast, boneless, skinless, cubed
- 250 g Sesame Garlic Sauce (recipe follows)
Garlic Sesame Grape Sauce
- 230 g Tree Top Grape Bar Base
- 115 g apple cider vinegar
- 2 g black pepper, ground
- 4 g mustard, dry
- 160 g yellow onion, diced
- 1 g garlic powder
- 36 g soy sauce
- 110 g brown sugar
- 6 g salt
- 36 g Worcestershire sauce
- 42 g honey
- 5 g sesame oil
- 3 g garlic fresh, chopped
- 10 g sesame seeds, toasted
- 15 g Hoisin sauce
- 15 g ketchup
- 2 g cornstarch
- 29 g water
Directions
Boneless Chicken Bites:
Heat oil in a deep fryer to 375 F
In a bowl, combine flour and seasonings. In a separate bowl, whisk together egg and milk.
Dip each piece of chicken in the egg mixture, then in the flour mixture. Repeat. Place breaded chicken on a wire rack and refrigerate for 30 minutes.
Fry the chicken pieces in batches for 4 to 5 minutes, until the chicken is cooked. Drain on paper towels.
In a large bowl, toss the hot chicken pieces with the Garlic Sesame Grape Sauce and serve immediately.
Garlic Sesame Grape Sauce
In a large saucepan over medium heat, whisk together all ingredients except 1 teaspoon of the sesame oil, 1 tablespoon of the garlic, cornstarch and water. Simmer for 30 minutes.
Stir together the cornstarch and water and add to the sauce along with the remaining sesame oil and garlic. Simmer for 2 minutes.
Yield: 1.5 cups
Assembly:
Toss the chicken with the sauce. Serve chicken on a platter garnished with scallions. Provide additional sauce for dipping.
