Gluten-Free Apple-Oatmeal-Peanut Butter Cookies
Ingredients
- 61 g Tree Top Low Moisture 3/8” Diced Apple
- 237 g Tree Top Apple Juice
- 122 g Tree Top Applesauce
- 113 g butter
- 201 g sugar
- 275 g brown sugar
- 7.50 g light Karo
- 150 g eggs
- 9 g soda
- 387 g peanut butter
- 400 g gluten-free oatmeal
Directions
In a medium bowl, soak apples in apple juice for at least 5 minutes. Drain.
In a large bowl, cream together the butter, sugar, brown sugar and Karo. Add applesauce and eggs. Stir in soda, peanut butter and apples. Add mixture to oatmeal and mix well.
Drop by large cookie scoop onto cookie sheet and bake in a 350°F oven for 12 – 13 minutes.
