Mango Tango Syrup
Ingredients
- 277.75 g Tree Top Mango Purée, 28 Brix
- 197.51 g Tree Top Pear Juice Concentrate, 70 Brix
- 123 g Northwest Naturals Mango Juice Concentrate WONF, 32 Brix
- 12.34 g Northwest Naturals Orange Juice Concentrate
- 987.55 g IQF Golden Delicious Apple Wedges
- 2.01 g butter flavor
- 1.30 g carmel sugar powder
- 0.86 g maple flavor
- 0.68 g sea salt
- 0.46 g mango flavor
- 0.46 g ground allspice
- 0.46 g Tetra plus starch
- 0.40 g vanilla flavor with caramel color
- 0.40 g natural apple flavor
- 0.37 g Ticazan rapid 3 gum powder
- 0.31 g ground cinnamon
Directions
In a small mixing bowl, mix all dry ingredients with flavors. Blend in starch and gum. Set aside.
In a large saucepan, mix together mango puree, pear juice concentrate, mango juice concentrate, and orange juice concentrate. Slowly whisk in dry ingredients. Heat over medium heat and fold in apples. Simmer covered for 15 minutes, stirring regularly. Remove from heat and place in an ice bath to cool.
