Apple Fritters
Ingredients
- 46 g Tree Top Apple Granules, 4 Mesh, rehydrated
- 39.50 g Tree Top Apple Juice Concentrate (reconstituted with 197.5 g water)
- 100 g eggs
- 64 g all-purpose flour
- 2.30 g baking powder
- 2.30 g baking soda
- 3.50 g ground cinnamon
- 3.50 g ground nutmeg
- Vegetable oil for deep frying.
Directions
Rehydrate apples in the Tree Top apple juice for at least 5 minutes.
Separate the eggs. Drop the whites into a large bowl; the yolks into a small one. Whisk the yolks until light and stir into the rehydrated apples. Add the flour, baking powder, baking soda, cinnamon and nutmeg, and stir to combine.
Beat the egg whites until stiff and fold into the apple mixture.
Heat ¼-inch of vegetable oil in a hot skillet. Drop the batter by heaping tablespoons into the hot oil. Cook for about 1 minute, turn and cook the other side for the same length of time. The fritters should be golden brown. Drain on absorbent paper and serve immediately, or keep warm in a low oven.
Yield: 2 – 4 servings (12 – 16 fritters)
