Apple Maple Muffins
Ingredients
- 256 g all-purpose flour
- 111 g brown sugar
- 9.2 g baking powder
- 3 g salt
- 184 g milk
- 113 g butter, melted
- 170 g maple syrup
- 60 g sour cream
- 50 g egg
- 2.10 g vanilla
Topping
- 41 g Tree Top LM ¼” Apple Dices (141’s), rehydrated in 39.5 g Tree Top Apple Juice Concentrate (reconstituted in 197.5 g water)
- 24 g all-purpose flour
- 38 g sugar
- 14 g chopped nuts
- 1.20 g ground cinnamon
- 29 g cold butter
Directions
Preheat oven to 400 F. Grease or paper-line muffin cups
In a large bowl, combine the flour, brown sugar, baking powder and salt.
In another bowl, combine the milk, butter, syrup, sour cream, egg and vanilla. Stir into the dry ingredients just until moistened. Drain apples and fold in.
Fill prepared muffin cups two-thirds full.
For topping, combine the flour, sugar, nuts and cinnamon; cut in butter until crumbly. Sprinkle over batter.
Bake for 16-20 minutes or until muffins test done. Cool for 5 minutes before removing from pans to wire racks.
Yield: 16 muffins
