Spicy Apple-Topped Muffins
Ingredients
- 117 g Tree Top Evaporated Apple Rings
- 356 g Tree Top Apple Juice
- 68 g butter, melted
- 0.57 g cinnamon
- 88 g sugar
- 250 g flour, sifted
- 18 g baking powder
- 246 g milk
- 5 g salt
- 1 egg, beaten
Directions
Preheat oven to 425 F
Gently boil apples in apple juice in covered pan for 1 minute. Let cool in liquid. Sift together dry ingredients. Combine milk, beaten egg and melted butter. Add flour mixture to liquid and stir just enough to moisten dry ingredients. Do not beat. Fill muffin cups half full.
Drain apple rings. Cut each in half and coat with 3 tablespoons sugar and cinnamon mixture. Place 3 halves on top of each muffin, inserting the inside edge into muffin batter.
Bake 18 to 20 minutes or until brown. Makes 12 small or 8 medium size muffins.
