Apricot-Apple Fruit and Nut Granola
Ingredients
- 30 g Tree Top Intermediate Moisture 1/8″ x 1/8″ Sulfured Apple Chips
- 12 g Tree Top Apple Juice Concentrate
- 13.50 g Tree Top Apple Flake Powder, 20 Mesh, Sulfured
- 3 g Tree Top Apple Fiber, 50 Mesh, Non-sulfured
- 75 g brown rice syrup
- 30.50 rolled oat flakes
- 30 g rice crisps
- 12.20 g dried apricots, chopped 1/4″
- 10 g wheat flour
- 10 g hazelnuts, roasted, 50% peeled, chopped 1/4″
- 10 g almonds, roasted, chopped 1/4″
- 7 g raisins or currants
- 5 g peanuts, roasted
- 5 g creamy peanut butter
- 5 g evaporated cane sugar
- 3 g soy oil
- 2.50 g glycerine
- 1.30 g vanilla extract
- 0.40 g apple flavor
- 0.23 g sea salt
- 0.20 g hazelnut extract
Directions
Blend salt and cane sugar with apple flavor and reserve.
Mix oats, apple chips, nuts, flake powder, raisins, rice crisps, fiber, apricots and flour together and reserve.
Heat brown rice syrup, apple concentrate, oil, hazelnut extract, glycerine, peanut butter and vanilla in a steam jacket blender and begin heating. Add reserved sugar and flavor mixture. Heat to 195 F, stirring constantly until sugar completely dissolves. Fold in reserved oat mixture and mix on low setting until incorporated. Press into parchment-lined tray only until even, with no gaps; not compacted. Cover exposed surfaced with plastic to avoid drying. Rest until reaches room temperature and cut into bars 2″ x 1″ and individually package and seal. Yields 20 bars 15 grams each.
