Whole-Wheat Apple Nut Bread
Ingredients
- 46 g Tree Top LM Diced ½” Infused Apples, NS
- 119 g Tree Top Apple Juice or Cider
- 122 g Tree Top Applesauce
- 240 g whole-wheat flour
- 7.50 g bran flakes
- 29 g wheat germ
- 5.2 g ground allspice
- 9.20 g baking powder
- 4.60 g baking soda
- 0.75 g ground cloves
- 123 g plain or vanilla yogurt
- 113 g honey
- 73 g vegetable oil
- 100 g eggs
- 122 g chopped walnuts (optional)
Directions
Preheat oven to 350 F. Grease and flour a 9″x5″ loaf pan.
In a large bowl, combine the flour, bran flakes, wheat germ, allspice, baking powder, baking soda, cloves and apples. Make a well in the center. Set aside.
In a small bowl, mix together the apple juice, applesauce, yogurt, honey, oil and eggs. Beat well and pour into the center of the dry ingredients. Stir to combine without overmixing. Fold in the nuts and spoon the batter into the prepared loaf pan.
Bake for 50-55 minutes, or until a skewer inserted into the center comes out clean. Let cool in the pan for 10 minutes; turn out of the pan onto a wire rack. Cool completely before cutting.
Yield: 12-15 slices
