Apple Cake with Cream Cheese Frosting
Ingredients
- 27 g Tree Top Apple Flake Powder, 20 M
- 129 g Tree Top Infused Apple Dices
- 192 g all-purpose flour
- 352 g sugar
- 12 g oat or wheat bran
- 5 g baking powder
- 5 g baking soda
- 5 g ground cinnamon
- 146 g vegetable oil
- 6 egg whites
- 57 g corn syrup
Directions
Spray a 13″x 9″ baking pan with nonstick coating and dust lightly with flour. Set aside.
In a large mixing bowl, combine flour, sugar, oat/wheat bran, apple flake powder, baking powder, baking soda and cinnamon. Add apples, oil, egg whites and corn syrup. Beat with electric mixer until well combined. Pour batter into the prepared baking pan.
Bake in a 350 F oven for 40 to 45 minutes or until a wooden toothpick inserted near the center comes out clean. Cool thoroughly in pan on a wire rack. When cool, frost the top of the cake with cream cheese frosting. Cover cake and store in refrigerator.
Makes 16 servings.
Cream Cheese Frosting:
In a medium mixing bowl, beat together 116 g of cream cheese, 240 g powdered sugar, and 5 g vanilla until light and fluffy. Gradually beat in 165 g powdered sugar to make frosting of spreading consistency. (If frosting is too thick, add small amounts of milk until consistency is right.)
