Chunky Apple Cake
Ingredients
- 600 g Tree Top Apple Sauce
- 100 g Tree Top Apple Dice ¼”
- 113 g butter, softened
- 402 g sugar
- 100 eggs
- 1.30 g vanilla
- 256 g all-purpose flour
- 4.50 g cinnamon
- 4 g nutmeg
- 3 g salt
- 2.30 g baking soda
Butterscotch Sauce
- 110 g brown sugar
- 57 g butter, cubed
- 116 heavy whipping cream
Directions
Preheat oven to 350 F. Grease a 13″ x 9″ baking pan.
In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
Combine flour, cinnamon, nutmeg, salt and baking soda; gradually add to creamed mixture and mix well. Batter will be stiff. Stir in apples and apple sauce until well combined.
Spread into the prepared baking dish. Bake for 40-45 minutes or until top is lightly browned and springs back when lightly touched. Cool for 30 minutes before serving.
While cake is cooling, combine brown sugar and butter in a small saucepan. Cook over medium heat until butter is melted. Gradually add the cream. Bring to a slow boil, stirring constantly. Remove from heat. Serve sauce with cake.
Makes 12-14 servings.
