Apple Pie Muffins
Ingredients
Muffin
- 110 g Tree Top Apple Purée
- 256 g all-purpose flour
- 12 g baking powder
- 50 g sugar
- 3 g cinnamon
- 2 g nutmeg
- 9 g salt
- 100 g eggs
- 245 g milk
- 112 g canola oil
- 3.8 g vanilla
Streusel Topping
- 32 g all-purpose flour
- 55 g brown sugar
- 1.5 g cinnamon
- 28 g butter, cold
Directions
Preheat oven to 400 F. Place paper cups in a 12-cup muffin tin.
In a medium bowl, combine flour, baking powder, sugar, cinnamon, nutmeg, and salt.
In a large bowl, beat eggs, milk, oil and vanilla for 1 minute on medium. Add flour mixture. Beat just until no streaks of flour remain. Stir in apples. Do not overmix!
Spoon batter into muffin cups. Top with streusel mix.
Bake for 18 to 20 minutes or until tops of muffins spring back when pressed lightly. Transfer to a wire rack to cool.
Makes 12 muffins.
