Peach and Chipotle Sauce
Ingredients
- 120 g Tree Top Peach Puree
- 20 g Tree Top Pear Flake Powder
- 7.5 g brown sugar
- 5.2 g cumin, ground
- 3.16 g roasted onion extract powder
- 3 g sea salt
- 1.65 g Ancho chile powder
- 0.58 g chipotle chile powder
- 0.30 g koji aji
- 0.21 g oregano, dried
- 2.20 g chicken type flavor, natural
- 0.15 g hickory smoke flavor
- 0.06 g cinnamon
- 250 g water
- 39 g yellow onions, IQF fire roasted
- 22 g poblano peppers, IQF fire roasted
- 9 g lime juice, fresh
Directions
Blend all dry ingredients together. Plate the flavors on the dry ingredients and set aside.
Heat wet ingredients in a kettle, then add the dry ingredient blend and mix continuously.
Heat to 160°F while continuously mixing.
Cool immediately and pack into pouches; store refrigerated.
